Caramel Corn

Caramel Corn

  • 1 cup unpopped popcorn (note that three bags popped plain microwave popcorn will also work)
  • 1 cup butter
  • 2 cups brown sugar
  • 1/2 cup dark corn syrup
  • 1 tsp salt
  • 1 tsp baking soda
  • 1 tsp vanilla
In a very large roasting pan ( I use the pan I cook my Thanksgiving turkey in and I spray it with cooking spray first) place the popped popcorn, set aside.
In a heavy sauce pan, combine butter, brown sugar, corn syrup and salt. Place over medium heat. Stir frequently while ingredients melt together. Once it comes to a boil, quit stirring and let boil for 5 minutes. Remove from heat immedietly and add baking soda and vanilla. Be careful, this step will make the caramel double in size for a moment!!! Stir until well combined and pour over popcorn. Using a wooden spoon coated with cooking spray mix well. Place into a 250 degree oven. Stir every 15 minutes for one hour. When done, place caramel corn on cooking spray coated baking sheets to cool. Once cool, break up and place into bags (or just eat a bunch!).

Note: The cooking spray makes clean up much easier.
