Chicken Orzo and Okra Soup

My Aunt Debbie is an amazing example of giving back. She has 4 boys, 3 which still live at home and also has her mom (our Grandma) who is 90 years old and her father-in-law who is 94 years old living with them. She gives so selflessly to her family that I often try to make dinner and take it over so she doesn't have to cook. I feel it is the least I can do. So today I decided to make a big pot of chicken soup to take over. I used homemade chicken stock from a chicken I boiled down for another dinner I was making this week. My friend  who has an over abundance of okra gave me some fresh okra to put into the soup. I was also able to add some fresh herbs from my own small garden. It looked delicious! Aunt Debbie was very grateful for the soup and I know the older folks will enjoy it as it is easy to eat and healthy! Scroll down to see the recipe.








Georgia's Chicken Orzo Soup

6 cups chicken stock
2-3 cups cooked diced chicken
1 can diced tomatoes
2 cups diced okra
1 large onion chopped
3 stalks of celery chopped
4 carrots diced
1 garlic clove
1/2 cup orzo
2 bay leaves
1/4 tsp sage
Fresh parsely -to taste
Fresh basil - to taste
Fresh oregano - to taste
Salt and pepper

In a large stock pan heat some olive oil. Add chopped onion, celery, carrots and garlic. Sautee until softened. Add chicke stock, chicken, tomatoes and bay leaves. Bring to a boil. Turn down heat so pot is simmering. Cook for approx 30 mins. Add herbs and spices to taste (meaning taste it....when it tastes good stop!). Continue to simmer for another 15 mins or so. Bring pot back to a boil. Add 1/2 cup orzo. Turn heat down and cover. Cook for 20 minutes more and then turn off the heat and serve.

  1. I love okra. I used to only like it fried but now also like it in soups and other dishes. My give back was not how I personally was giving back but how another is giving of herself. I hope that is ok.

  5. @jmkeune I only added the okra because it was fresh. i normally don't add okra to anything lol. BUT the WHOLE family called to tell me how good this soup turned out so the okra and orzo were apparently a hit!
